Ingredients
- 4- 5 large yellow onions , thinly sliced
- 3 tbsp butter
- 1 tbsp olive oil
- 1 tsp sugar
- 2 cloves of garlic minced
- 1/4 cup of brandy
- 1/2 cup of white wine
- 6 cups of beef broth
- 1 bay leaf
- 2- 3 sprigs of thyme (or 1/2 tsp of dried)
- salt and pepper
for the topping
1 French baguette sliced and toasted
2 1 1/2 cups of shredded Gruyere cheese ( or Swiss)
1/2 cup parmesan
Instructions
- Caramalize the onions melt butter and olive oil in a heavy pot over medium heat.
- Add sliced onions , sugar , and a pinch of salt. Stir and cook slowly for 35- 45 minutes , until the onions turn deep, golden, sweet and jammy.
- Add garlic and brandy , and wine stir in the garlic and cook one minute pour in the brandy – let it bubble with excitement and cook off the white wine and scrape the brown bits from the bottom for xtra flavor.
- make a broth Add the beef broth , bay leaf , thyme , salt and pepper simmer uncovered for 25- 30 minutes remove the bay leaf and thyme stems
- lattle soup in a oven safe bowl place your French baguette on top with your Gruyere cheese and place in oven on broil until the cheese is bubbly brown and serve with a fresh green salad or a grilled cheese sandwich.
